Decadently moist and utterly irresistible chocolate cake.
Ingredients:
  • Olive oil, to grease
  • 2 eggs
  • 215g (1 cup) caster sugar
  • 2.20 gm vanilla essence
  • 150g (1 cup) self-raising flour
  • 50g (1/3 cup) plain flour
  • 50g (1/2 cup) Cocoa Powder
  • 160ml (2/3 cup) olive oil
  • 60ml (1/4 cup) low-fat milk
  • Cocoa powder, extra, to dust
Instructions:
  • Preheat oven to 180°C. Grease a 19cm square cake pan with oil and line with non-stick baking paper.
  • In a small bowl, use an electric beater to whip the eggs and sugar until light and fluffy. Mix in the vanilla, then transfer everything to a large bowl.
  • Gradually add the mixture of flours and cocoa powder. Gently fold until almost combined. Then, mix in the olive oil and milk until fully incorporated.
  • Transfer the cake batter into the prepared pan and level the top. Bake for 35-40 minutes or until a skewer inserted in the center comes out with a few crumbs. Let it cool for 5 minutes before carefully turning it out onto a wire rack to cool. Dust with cocoa powder before serving.
