Savor a healthier twist on classic chicken Caesar salad.
Ingredients:
  • 1/4 cup reduced-fat mayonnaise or salad dressing
  • 2 tablespoons lemon juice
  • 2 teaspoons Dijon mustard
  • 1 clove garlic, finely chopped
  • 4 cups shredded romaine lettuce
  • 2 cups shredded cooked chicken breasts
  • 1/4 cup sliced drained sun-dried tomatoes in oil
  • 1 hard-cooked egg, chopped
  • 2 medium green onions, sliced (2 tablespoons)
  • 1/4 cup shredded Parmesan cheese, if desired
Instructions:
  • Combine all dressing ingredients in a small bowl and whisk until smooth and well blended.
  • Place a bed of crisp lettuce on each plate, followed by tender chicken slices, juicy tomatoes, and a perfectly cooked egg. Drizzle the dressing over the top and finish with a generous sprinkle of onions and cheese.
