Healthier mac and cheese with whole wheat pasta, skim milk, and low-fat Cheddar.
Ingredients:
  • cooking spray
  • 6 ounces whole wheat elbow macaroni
  • 1 (5 ounce) can evaporated skim milk, divided
  • 1 teaspoon tapioca starch
  • 5 ounces low-fat sharp Cheddar cheese, grated
  • 2 teaspoons Dijon mustard, or more to taste
  • 0.5 teaspoon Worcestershire sauce
  • 1 pinch cayenne pepper
Instructions:
  • Prepare an 8x8-inch baking dish by spraying it with cooking spray and keep it aside.
  • Bring a big pot of lightly salted water to a boil. Add whole wheat macaroni and cook until al dente, about 8 minutes, stirring occasionally.
  • Position the oven rack 6 inches below the heat source and preheat the broiler.
  • Combine 1 tablespoon of evaporated milk and tapioca in a saucepan. Gradually whisk in the rest of the milk. Add Cheddar cheese, mustard, Worcestershire sauce, and pepper. Simmer until the sauce thickens slightly and the cheese melts. Mix in drained pasta and transfer to a baking dish.
  • Broil until the top turns golden brown, which should take 2 to 3 minutes. Let it cool for 5 minutes before serving.
