Lighten up Amish-style macaroni salad with low-fat mayo for a healthier twist, with eggs and crunchy celery for extra flavor.
Ingredients:
  • 1 (12 ounce) package elbow macaroni
  • 4 hard-cooked eggs, chopped
  • 3 stalks celery, minced
  • 1 (6 ounce) package frozen peas, thawed
  • 2 cups low fat mayonnaise (such as Hellmann's® Low Fat)
  • 3 tablespoons prepared yellow mustard
  • 0.25 cup white sugar
  • 2 teaspoons white vinegar
  • 0.75 teaspoon celery seed
Instructions:
  • Bring a large pot of salted water to a boil and cook elbow macaroni until al dente, about 8 minutes. Drain and let cool.
  • Combine eggs, celery, and peas in a large bowl. In another bowl, whisk together low fat mayonnaise, yellow mustard, sugar, vinegar, celery seed, and salt until the sugar is dissolved. Pour the dressing over the vegetables and mix in macaroni until well coated. Chill in the refrigerator for at least 2 hours before serving.
