Moist and savory low-fat banana bread.
Ingredients:
  • 2 eggs
  • 0.66666668653488 cup white sugar
  • 2 very ripe bananas, mashed
  • 0.25 cup applesauce
  • 0.33333334326744 cup nonfat milk
  • 1 tablespoon vegetable oil
  • 1 tablespoon vanilla extract
  • 1.75 cups all-purpose flour
  • 2 teaspoons baking powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon salt
  • 0.33333331346512 cup chopped walnuts
Instructions:
  • Preheat the oven to 325 degrees F (165 degrees C), and prepare a bread pan by spraying it with non-stick cooking spray and lightly dusting with flour.
  • In a large bowl, vigorously whisk together eggs and sugar until they become pale and airy, about 5 minutes. Stir in bananas, applesauce, milk, oil, and vanilla until well combined.
  • Combine flour, baking powder, baking soda, and salt in a bowl. Gently stir it into the banana mixture until just blended. Add walnuts and fold them in. Transfer batter to the prepared pan.
  • Bake in a preheated pan until golden and a toothpick inserted into the center of the loaf comes out clean, approximately 1 hour. Then, flip the bread out onto a wire rack to cool.
