Delicious, moist banana bread with rich flavor and reduced sugar and fat.
Ingredients:
  • 0.66666668653488 cup white sugar
  • 0.25 cup margarine, softened
  • 2 eggs
  • 1 cup mashed bananas
  • 1.6666666269302 cups all-purpose flour
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 0.25 teaspoon baking powder
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C), then generously coat a 9x5x3 inch loaf pan with non-stick cooking spray.
  • Combine white sugar and margarine/butter in a medium bowl, beating until smooth and creamy. Mix in the eggs, water, and bananas until well blended.
  • Combine the flour, baking soda, salt, and baking powder until just moistened, making sure to scrape the sides of the bowl to fully incorporate all ingredients.
  • Bake at 350°F (175°C) for approximately 60 minutes until the top is firm and golden brown. Cool the bread on its side for 10 minutes in the pan, then transfer to a rack to cool further. For added sweetness and flavor, consider incorporating mini chocolate chips or small fruit pieces before baking.
