Lighten up banana nut bread with fat-free sour cream and reduced-fat margarine for a guilt-free, delicious treat.
Ingredients:
  • 0.75 cup fat free sour cream
  • 4 egg whites
  • 0.25 cup chopped walnuts
  • 0.33333298563957 cup raisins
  • 2 teaspoons baking powder
  • 2 teaspoons baking soda
  • 6 very ripe bananas, mashed
  • 2 tablespoons reduced fat margarine
  • 1 tablespoon vanilla extract
  • 0.66666698455811 cup packed light brown sugar
  • 4 cups unbleached all-purpose flour
Instructions:
  • Preheat your oven to 375 degrees F (190 degrees C, gas mark 5) while you lightly spray two 8x4x2 inch loaf pans with a non-stick cooking spray.
  • Mix the fat free sour cream, egg whites, vanilla, bananas, and margarine together on medium speed with an electric mixer until smooth, creamy, and well blended.
  • Sift together the flour, baking powder, baking soda, salt, and light brown sugar into the banana mixture. Stir until well combined. Adjust with additional flour as needed until a thick dough forms. Gently mix in optional nuts and raisins. Use an electric mixer on low for 1 minute. Divide dough evenly between the two loaf pans.
  • Bake at 375 degrees F (190 degrees C) until golden and the center is fully cooked. Remove breads from pans right away and let them cool on a rack before slicing.
