Stay on track with your resolutions with this guilt-free dessert.
Ingredients:
  • 1.8L ctn Light & Creamy Classic Vanilla ice-cream
  • 2 small ripe bananas
  • 21.00 gm lemon juice
  • 1/2 tsp vanilla bean paste
  • 200g pkt Milk Chocolate Biscuits
  • 42.60 gm rice malt syrup
  • 1 1/2 tsp raw cacao powder, sifted
  • 40.00 ml flaked almonds, toasted
  • 10 cherries, to serve
Instructions:
  • Prepare a 16 x 26cm slice pan by greasing it and lining it with baking paper, leaving some paper to overhang. In a large bowl, let the ice-cream sit for 10 minutes to soften.
  • Combine the bananas, lemon juice, and vanilla bean paste in a small bowl and mash with a fork until smooth.
  • Gently mix in the ice-cream. Transfer the mixture to the prepared pan and cover with plastic wrap. Freeze for 8 hours or overnight until it sets.
  • Prepare a baking tray with baking paper. Arrange 10 biscuits, chocolate side up, on the tray. Transfer the ice-cream from the pan onto a clean chopping board. Quickly cut out 10 discs of ice-cream using a 5cm round cutter. Place one ice-cream disc on each biscuit, then top each with another biscuit, chocolate side down, and press gently to seal. Freeze for 4 hours or until firm.
  • For the chocolate sauce, simply mix rice malt syrup with cacao powder in a bowl until it's smooth. Then, spoon the sauce over each ice-cream sandwich, sprinkle with toasted almonds, and top with a cherry.
