Banana Split Ice-Cream Sandwiches

Indulge in delicious banana ice-cream sandwiches with a crunchy Cocoa Puffs® cereal coating – the ultimate frozen treat!
Ingredients:
  • 2 tablespoons butter or margarine
  • 36 large marshmallows (8 ounces)
  • 6 cups Cocoa Puffs™ cereal
  • 1 pint (2 cups) strawberry ice cream, slightly softened
  • 1 medium banana, very thinly sliced
Instructions:
  • Prepare a 15 1/2x10 1/2x1 inch jelly roll pan by lining it with aluminum foil and spraying the foil with cooking spray.
  • In a large microwavable bowl, heat butter until melted, about 30 seconds on High. Mix in marshmallows and microwave on High for 1 to 3 minutes, stirring every 30 seconds, until smooth. Add cereal and stir until combined. Press mixture evenly into a pan and chill in the freezer for 15 minutes.
  • Invert pan onto cutting board, discard foil. Slice cereal mixture into 18 squares. Spread 1/4 cup ice cream on 9 squares, add 4 banana slices on each. Place remaining squares on top and gently press. Freeze for 45 minutes until firm.
  • Cut each sandwich in half horizontally and wrap each portion individually in waxed paper before freezing for up to 1 week.
