Lighten up your chicken and broccoli casserole with reduced-fat ingredients for a guilt-free but still delicious meal!
Ingredients:
  • 1 pound boneless, skinless chicken breast, cut in bite-sized pieces
  • 1 (14 ounce) bag frozen chopped broccoli
  • 1 (10.5 ounce) can reduced-fat condensed cream of mushroom soup
  • 0.5 cup shredded reduced-fat Cheddar cheese
  • 2 tablespoons light mayonnaise
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and lightly coat a casserole dish with cooking spray.
  • Heat a large skillet over medium-high heat and coat with cooking spray. Cook chicken until no longer pink in the center, approximately 10 minutes.
  • Combine frozen broccoli, condensed soup, creamy Cheddar cheese, and rich mayonnaise in a large bowl, stirring until fully mixed.
  • Combine the cooked chicken with the broccoli mixture, ensuring everything is coated evenly, then transfer the mixture to the casserole dish.
  • Place in the oven and bake for 20-25 minutes until golden brown.
