Quick, satisfying, and tasty meal.
Ingredients:
  • 40.00 ml dry sherry
  • 21.00 gm salt-reduced soy sauce
  • Olive oil spray
  • 400g chicken breast fillets, thinly sliced
  • 1 red onion, cut into thin wedges
  • 2 tsp sambal oelek
  • 400g pumpkin, peeled, deseeded, thinly sliced
  • 80ml (1/3 cup) water
  • 300g broccoli, trimmed, cut into florets
  • Steamed white rice, to serve
Instructions:
  • Combine the sherry, soy sauce, and sugar in a bowl, stirring until the sugar dissolves.
  • Preheat a wok or large non-stick frying pan over high heat. Generously coat with olive oil spray. Stir-fry half of the chicken until golden, about 2-3 minutes. Transfer to a plate and repeat with the remaining chicken.
  • Spritz wok with olive oil spray and toss in the onion, stir-frying for 1-2 minutes. Introduce garlic and sambal oelek, stir-frying for another minute. Toss in the pumpkin and water, stir-frying for about 3 minutes until pumpkin is nearly tender. Add broccoli and stir-fry for an additional 2 minutes until broccoli is vibrant green and tender-crisp.
  • Combine the chicken and sherry mixture with the pumpkin mixture and stir-fry for 1 minute until the chicken is heated through. Serve hot with steamed rice.
