Stir-fried chicken and tofu with vegetables in a flavorful Chinese sauce, perfect on its own, with rice, or over noodles.
Ingredients:
  • 3 tablespoons light soy sauce
  • 1 teaspoon white sugar
  • 1 tablespoon cornstarch
  • 3 tablespoons Chinese rice wine
  • 1 medium green onion, diced
  • 2 skinless, boneless chicken breast halves - cut into bite-size pieces
  • 3 cloves garlic, chopped
  • 1 yellow onion, thinly sliced
  • 2 green bell peppers, thinly sliced
  • 1 (12 ounce) package firm tofu, drained and cubed
  • 0.5 cup water
  • 2 tablespoons oyster sauce
  • 1.5 tablespoons chili paste with garlic
Instructions:
  • Combine soy sauce, sugar, cornstarch, and rice wine in a bowl. Add green onion and chicken to the marinade. Let it sit for at least 15 minutes.
  • Cook the chicken with the marinade in a wok over medium-high heat for about 5 minutes until almost done. Add the garlic, onion, and peppers and cook for another 5 minutes until the vegetables are crisp-tender and the chicken is fully cooked with clear juices.
  • Combine the tofu, water, oyster sauce, and chili paste in the wok, stirring and cooking until heated through.
