Light and fluffy egg foo young made with chicken tenderloin and egg whites, ready in minutes. Perfect for breakfast or any time of day.
Ingredients:
  • 2 chicken tenders, chopped
  • 4 egg whites
  • 1 dash soy sauce
  • 0.5 cup bean sprouts
  • 0.5 cup finely chopped water chestnuts
  • 1 green onion, chopped, or to taste
Instructions:
  • Heat a skillet over medium heat, greasing it with cooking spray. Cook the chicken until browned and cooked through, about 5 minutes. Spread the chicken pieces evenly in the skillet using a spatula and spray with more cooking spray if necessary.
  • Combine egg whites and soy sauce in a bowl, then mix in bean sprouts, water chestnuts, and green onion. Pour the mixture over the chicken in the skillet and cook until golden and almost set, around 3 minutes. Flip the pancake and cook until the other side is golden and set, for about 1-2 minutes more.
