Satisfying air-fried chicken tacos, ideal for busy weeknights, loved by the whole family.
Ingredients:
  • 375.00 ml panko breadcrumbs
  • 35g sachet smokey chipotle seasoning
  • 2 tsp finely grated lime rind
  • 82.50 ml plain flour
  • 500g chicken tenderloins
  • 2 corn cobs, husks and silk removed, halved
  • Olive oil spray
  • 8 stand and stuff taco shells
  • 80g mixed salad leaves
  • Plain Greek-style yoghurt, to serve
  • 2 tomatoes, diced
  • 1 avocado, diced
  • 62.50 ml fresh coriander leaves
  • 21.00 gm lime juice, plus lime cheeks, to serve
Instructions:
  • In a bowl, mix together tomatoes, avocados, cilantro, and lime juice. Season with salt and pepper to taste. Cover and chill until ready to serve.
  • Combine breadcrumbs, seasoning, and lime rind in one bowl, season with salt and pepper. Whisk eggs in another bowl. Place flour in a separate bowl. Coat chicken with flour, dip in egg, and coat with breadcrumb mixture. Place on a plate. Spray chicken and corn with oil.
  • Arrange chicken and corn on air fryer racks. Air fry at 180°C for 12 minutes. Take out corn. Continue air frying chicken for 5 to 8 more minutes until crispy and fully cooked. Plate chicken.
  • Arrange taco shells upside-down on the racks of the air fryer and air-fry at 180°C for about 1 minute until they are warmed through.
  • Distribute salad leaves into taco shells, then add chicken, yogurt, and salsa. Serve with corn and lime wedges.
