Healthier air fryer chicken with Southern flavor, minus excess oil.
Ingredients:
  • 2 chicken drumsticks
  • 2 chicken thigh cutlets
  • 260.00 gm buttermilk
  • 99.00 gm self-raising flour
  • 1 tsp garlic powder
  • 1 tsp onion flakes
  • 2.50 gm smoked paprika
  • 200g red cabbage, thinly shredded
  • 200g green cabbage, thinly shredded
  • 1 carrot, coarsely grated
  • 2 green onions, finely chopped
  • 82.50 ml coarsely chopped mint leaves
  • 82.50 ml light Greek-style yoghurt
  • 23.40 gm Dijon mustard
  • 1 garlic clove, crushed
Instructions:
  • Peel off chicken skin and carefully cut 2 deep slits in the thickest part of the meat. Transfer to a bowl and pour buttermilk over it. Cover, refrigerate for at least 6 hours or overnight.
  • Mix together the flour, garlic powder, onion flakes, and paprika in a large bowl. Season generously with salt and pepper to taste.
  • Preheat your Philips Airfryer to 180C and lightly oil the basket. Dredge each piece of chicken in the flour mixture, ensuring it's fully coated. Place in the basket and repeat with the remaining chicken. Lightly spray the chicken and air fry for 20 minutes or until cooked through.
  • Combine shredded cabbages, grated carrot, diced onion, and fresh mint in a large bowl. In a separate small bowl, mix together creamy yogurt, zesty mustard, and minced garlic. Season with salt and pepper. Pour the yogurt mixture over the vegetables and toss everything together until well coated.
  • Present the chicken alongside a fresh and crunchy coleslaw.
