Light and crispy air fryer hush puppies with cornmeal and buttermilk offer a healthier spin on classic deep-fried fritters.
Ingredients:
  • nonfat cooking spray
  • 1 cup yellow cornmeal
  • 0.75 cup all-purpose flour
  • 1.5 teaspoons baking powder
  • 0.5 teaspoon salt
  • 0.25 teaspoon cayenne pepper, or more to taste
  • 0.25 teaspoon garlic powder
  • 2 tablespoons minced onion
  • 2 tablespoons minced bell pepper
  • 0.75 cup low-fat buttermilk
  • 1 large egg
Instructions:
  • Preheat the air fryer to 390 degrees F (198 degrees C following the manufacturer's guidance. Line the basket with foil and give it a quick spray of cooking oil.
  • Combine cornmeal, flour, baking powder, salt, cayenne, and garlic powder in a large bowl. Add onion and bell pepper and mix well.
  • In a separate bowl, combine buttermilk and egg, then add this mixture to the dry ingredients. Stir until well combined and let it rest for 5 minutes.
  • Spoon batter into the prepared basket using a 2-tablespoon scoop, making sure to leave space between each scoop. Lightly spray with cooking spray.
  • Air fry until perfectly golden brown, crispy, and cooked through in the preheated air fryer for 9 to 10 minutes. Serve piping hot.
