Easy Skinless Fried Chicken Thighs

Healthier twist on Southern fried chicken: Seasoned flour-coated, skinless chicken thighs, fried in corn oil.
Ingredients:
  • 1 cup corn oil, or as needed
  • 0.5 cup all-purpose flour
  • 2 teaspoons salt
  • 0.5 teaspoon paprika
  • 8 skinless chicken thighs
Instructions:
  • Prepare all the ingredients. Heat oil in a spacious deep skillet until it reaches 350°F (175°C).
  • In a big resealable plastic bag, blend together flour, salt, pepper, paprika, and garlic powder until fully mixed.
  • Ensure the chicken thighs are dry by patting them with paper towels. Place them in the plastic bag with the flour mixture, seal the bag, and shake vigorously until the chicken is fully coated.
  • Fry the chicken in hot oil, turning occasionally, until beautifully golden brown and crispy, for approximately 20 minutes. Place on a paper towel-lined plate to drain excess oil.
