Quick and delicious homemade teriyaki chicken with tender skinless chicken breasts simmered in a savory sauce, topped with toasted sesame seeds. Ready in just 30 minutes!
Ingredients:
  • 3/4 cup soy sauce (or mix tamari and water in equal proportions to make 3/4 cup)
  • 3/4 cup sake
  • 3/4 cup mirin
  • 4 tablespoon sugar
  • A 1-inch piece of ginger, grated fine
  • 4 skinless, boneless chicken breasts, about 1 1/4 to 1 1/2 pounds total (set out for 30 minutes to come to room temp)
  • 2 to 3 tablespoon sesame seeds
Instructions:
  • Simmer the chicken gently in a flavorful mix of sake, mirin, soy sauce, sugar, and ginger: Combine grated ginger, sugar, soy sauce, sake, and mirin in a pot and bring to a gentle simmer. Add the chicken breasts, lower the heat to the lowest setting, cover, and cook gently for 20 minutes. For larger chicken breasts, adjust cooking time accordingly or cut them in half before cooking.
  • Toast sesame seeds in a dry pan until golden brown while chicken is poaching. Transfer to a small bowl and set aside.
  • Transfer the chicken to a plate and tent it with foil to keep it warm.
  • Boost the flavor: Reheat the sauce to a boil and cook it down to a syrupy consistency, for about 8 to 10 minutes. Stir occasionally as you watch it closely.
  • Slice the chicken breasts, douse with teriyaki sauce, sprinkle with sesame seeds, and serve alongside plain white rice.
