Try this healthier twist on classic southern-fried chicken using an air fryer for a crispy, savory dish with less fat.
Ingredients:
  • 2 1/2 teaspoons paprika
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon pepper
  • 3/4 cup buttermilk
  • 4 boneless skinless chicken breasts (about 1 1/2 lb total)
  • 3/4 cup Gold Medal™ All-Purpose Flour
  • Cooking spray
Instructions:
  • Combine the Seasoning Mix ingredients in a small bowl.
  • Combine buttermilk and 1 tablespoon of seasoning mix in a shallow bowl. Then, halve the chicken breasts crosswise, and place them in the buttermilk mixture, making sure to coat them well. Cover and chill in the fridge for 1 hour.
  • Cut an 8-inch round of parchment paper and lay it at the bottom of the air fryer basket. Give it a light spray of cooking spray.
  • Mix flour with 1 tablespoon of seasoning in a shallow bowl. Take out 4 pieces of chicken from the marinade, leaving the rest chilled, and coat the 4 pieces with the flour mixture.
  • Lay the breaded chicken on a piece of parchment paper in the air fryer basket, then generously spritz the top of the chicken with cooking spray.
  • Preheat oven to 325°F. Bake the chicken for 10 minutes. Turn the chicken over, generously spray the tops with cooking spray, and bake for an additional 8 to 12 minutes, or until the chicken reaches an internal temperature of at least 165°F. Keep the cooked chicken warm. Repeat the process with the remaining chicken pieces, and dispose of any leftover marinade and flour mixture.
