Healthier peach cobbler with reduced sugar tastes just as indulgent as the classic version.
Ingredients:
  • 8 fresh peaches - peeled, pitted, and sliced into thin wedges
  • 2 tablespoons brown sugar
  • 0.25 teaspoon ground cinnamon
  • 0.125 teaspoon ground nutmeg
  • 1 teaspoon fresh lemon juice
  • 2 teaspoons cornstarch
  • 1 cup whole wheat pastry flour
  • 0.25 cup white sugar
  • 0.25 cup brown sugar
  • 1 teaspoon baking powder
  • 0.5 teaspoon salt
  • 6 tablespoons unsalted butter, chilled and cut into small pieces
  • 0.25 cup boiling water
  • 1 teaspoon ground cinnamon
Instructions:
  • Preheat your oven to a toasty 425 degrees F (220 degrees C).
  • In a large bowl, mix together peaches, 2 tablespoons of brown sugar, 1/4 teaspoon of cinnamon, a dash of nutmeg, lemon juice, and cornstarch until well coated. Transfer the mixture to a 2-quart baking dish.
  • Place in the oven and bake for 10 minutes until golden brown.
  • In a large bowl, mix together flour, white sugar, 1/4 cup brown sugar, baking powder, and salt. Use your fingertips or a pastry blender to blend in the butter until the mixture looks like coarse meal. Gently stir in water until just combined.
  • Take the peaches out of the oven, then generously sprinkle spoonfuls of the flour mixture over them.
  • Combine 2 tablespoons of brown sugar with 1 teaspoon of ground cinnamon. Sprinkle the cobbler generously with the sweet cinnamon mixture. Bake until the topping turns a beautiful golden brown, approximately 30 minutes.
