Whip up a healthier twist on classic Chicken Kiev by air frying - crispy outside, minus the excess oil!
Ingredients:
  • 4 tablespoons butter, softened
  • 2 tablespoons chopped fresh flat-leaf parsley
  • 1 clove garlic, minced
  • 1 teaspoon salt
  • 2 (8 ounce) skinless, boneless chicken breast halves, pounded to 1/4-inch thickness
  • 0.5 cup all-purpose flour
  • 1 cup panko bread crumbs
  • nonstick cooking spray
Instructions:
  • Combine butter, parsley, garlic, and 1 teaspoon salt in a bowl, mixing until well combined. Shape the herbed butter into two balls, then place them on a baking sheet and freeze for 10 minutes.
  • Lay the chicken on a clean surface and season both sides with salt and pepper. Put a chilled butter ball in the middle of each chicken breast. Fold the sides of the chicken over the butter to form a ball shape, then wrap each ball tightly in plastic wrap. Place the wrapped balls on a baking sheet and freeze for 30 minutes.
  • Preheat the air fryer to 400°F (200°C).
  • Prepare your breading station by arranging three shallow bowls. Place flour in the first bowl, beaten egg in the second, and combine panko with paprika in the third. Coat each chicken breast in flour, egg, and the flavorful panko mixture.
  • Add the breaded chicken to the air fryer basket and generously spray each breast with nonstick spray.
  • Air-fry the chicken for 5 minutes, then spray with nonstick spray, and continue cooking until no longer pink in the center and the juices run clear, about an additional 5 minutes, reaching an internal temperature of at least 165°F (74°C) when checked with an instant-read thermometer.
  • Place the chicken on a cutting board and allow it to rest for 5 minutes before serving.
