Lime chicken soup

Cozy up with comforting chicken soup this winter.
Ingredients:
  • 1000.00 gm (1 litre) water or Massel chicken style liquid stock
  • 2 (about 500g) chicken breast fillets
  • 1 corn cob, husks and silks removed
  • 9.20 gm olive oil
  • 1 green capsicum, seeded, finely chopped
  • 2 ripe tomatoes, finely chopped
  • 2.50 gm ground cumin
  • 1 tsp dried oregano
  • 1 lime, thinly sliced
  • 42.00 gm lime juice, extra
  • 250.00 ml coriander leaves
  • 4 green onions, thinly sliced
  • 100g feta, crumbled
Instructions:
  • In a saucepan, combine water and chicken over high heat until boiling. Reduce heat and simmer gently for 10 minutes until chicken is tender. Drain the chicken, keeping the flavorful cooking liquid. Shred the chicken and set aside.
  • 1. Use a sharp knife to carefully remove kernels from the corn cob. Heat oil in a saucepan over medium heat. Add corn and capsicum and sauté for 2 minutes or until capsicum is tender. Mix in tomato, cumin, and oregano. Stir and cook for 2 minutes or until tomato softens. Add chicken, stock, lime slices, and juice; bring to a simmer. Taste and season with salt and pepper.
  • Pour the soup into serving bowls. Top with fresh coriander, sliced green onions, and crumbled feta cheese. Serve promptly.
