Cauliflower "rice" - a delicious, grain-free alternative.
Ingredients:
  • 1 head cauliflower, cut into florets
  • 1 tablespoon water
  • 1 lime, juiced and zested
  • 0.5 cup chopped cilantro
  • 2 tablespoons butter
Instructions:
  • Shred cauliflower florets or pulse in a food processor until it has a rice-like texture.
  • Combine grated cauliflower and water in a covered microwave-safe dish.
  • Microwave cauliflower on high for 7 minutes until tender.
  • Blend lime zest, lime juice, cilantro, and butter into cooked cauliflower until combined.
