Ingredients:
  • Juice and zest of 2 limes
  • 2 tsp sesame oil
  • 36.40 gm extra virgin olive oil
  • Sea salt & freshly ground black pepper to taste
  • 4 free range chicken breast fillets, halved horizontally
  • 1kg red seedless watermelon flesh, cubed
  • 250.00 ml fresh mint leaves, torn
  • 250.00 ml fresh coriander leaves
  • 4 shallots, thinly sliced
  • 1 long red chilli, thinly sliced
  • 180g tub Persian fetta, crumbled
Instructions:
  • Combine lime juice, lime zest, sesame oil, and olive oil in a small jug. Season with salt and pepper. In a medium bowl, toss chicken with half of the dressing until fully coated. Grill the chicken on a heated grill plate for 1-2 minutes per side until cooked through. Let it rest for 5 minutes before serving.
  • Place watermelon, mint, coriander, shallots, and chili in a large bowl. Pour the remaining dressing over the ingredients and mix well. Divide the salad among four plates and sprinkle with feta cheese. Serve with chicken.
