Try this tasty dish of pesto, potatoes, and green beans for a flavorful dinner.
Ingredients:
  • 250g fresh linguine
  • 250g chat (small coliban) potatoes, peeled, thinly sliced
  • 150g green beans, ends trimmed
  • 80.00 gm pesto sauce
  • 20g (1/4 cup) grated fresh parmesan
  • Freshly ground black pepper
Instructions:
  • Simmer the pasta and potatoes in a pot of salted boiling water for 8 minutes. Toss in the beans and continue cooking for 2 minutes until the pasta is al dente, the potato is tender, and the beans are vibrant green and crisp-tender. Drain the veggies thoroughly, saving 2 tablespoons of the cooking liquid.
  • Combine the pasta mixture and reserved water in a large heatproof bowl. Add the pesto and parmesan, then gently toss together. Season with pepper to taste. Serve immediately.
