Linguine with Brussels sprouts, blue cheese and walnuts

Transform skeptics with this delicious 30-minute Brussels sprouts dish!
Ingredients:
  • 56.88 gm extra virgin olive oil
  • 80g stale sourdough bread, torn into small chunks
  • 500g Brussels sprouts, quartered
  • 500g linguine
  • 150g gorgonzola dolce, diced
  • 57.50 gm walnuts, toasted
Instructions:
  • In a large frying pan over medium-high heat, warm 1 tablespoon of oil. Cook the bread, tossing occasionally, for 3-4 minutes until it's golden and crisp. Set it aside.
  • In the same pan, heat 1 tablespoon of oil until shimmering. Sauté the sprouts, stirring occasionally, for about 8 minutes until they are beautifully browned and just tender.
  • Cook the pasta in a large saucepan of boiling salted water according to the package instructions. Save 2 tablespoons of the cooking liquid. Drain the pasta and put it back in the pan. Mix in the reserved cooking liquid, remaining oil, and two-thirds of the cheese. Stir over low heat for a minute until the cheese melts. Season to taste. Add in the sprouts, bread, walnuts, and the rest of the cheese. Serve right away.
