Whip up a quick and creamy trout pasta for a fresh fish dish any day of the week.
Ingredients:
  • 500g linguine
  • 1 lemon
  • 250ml (1 cup) thin cream
  • 2 small zucchini, ends trimmed, thinly sliced crossways
  • 2 x 150g pkts smoked trout portions, flaked
  • 40.00 ml fresh dill sprigs
Instructions:
  • Boil pasta in a large pot of salted water as per package instructions until al dente, then drain.
  • Zest the lemon using a zester or use a vegetable peeler to remove the rind, then carefully slice off the white pith. Cut the rind into thin strips. In a large non-stick frying pan over medium heat, combine the lemon rind, cream, and zucchini. Cook, stirring occasionally, until it comes to a boil, about 2-3 minutes.
  • Combine the pasta, smoked trout, and dill together. Portion into serving bowls and enjoy your delicious meal.
