Impress guests with festive Linzer Cookie Bars featuring tangy raspberry jam and sweet cookie mix. Perfect for gifting or indulging this holiday season.
Ingredients:
  • 1 pouch (17.5 oz) Betty Crocker™ Sugar Cookie Mix
  • 1/2 cup cold butter, cut into pieces
  • 1 cup seedless raspberry jam
  • 1 pouch (17.5 oz) Betty Crocker™ Oatmeal Cookie Mix
  • 1 tablespoon water
  • 1/2 cup chopped almonds
Instructions:
  • Preheat oven to 375°F and generously coat a 13x9-inch pan with cooking spray.
  • Place the sugar cookie mix in a large bowl. Add 1/2 cup of cold butter and use a pastry blender or fork to cut it in until the mixture is crumbly (be careful not to overmix). Press the mixture firmly into the bottom of the pan.
  • After baking for 15 minutes, elegantly spoon and evenly spread the jam over the partially baked crust.
  • In a separate large bowl, add the oatmeal cookie mix. Incorporate 1/2 cup cold butter using a pastry blender or fork until the mixture is crumbly (do not overmix). Mix in water and chopped almonds. Sprinkle the oatmeal cookie mixture over the jam layer and gently press it into the jam.
  • Bake for 20-24 minutes until the top is lightly golden brown and bubbling around the edges. Allow to cool completely for about 2 hours. Cut into 6 rows by 4 rows and store in the refrigerator loosely covered.
