Little apple cakes

Ingredients:
  • 185g butter, chopped
  • 160g caster sugar
  • 150g self-raising flour
  • 75g plain flour
  • 1.25 gm ground cinnamon, plus extra to dust
  • 80ml milk
  • 1 gala apple
  • 150g icing sugar
  • 2.20 gm vanilla extract
Instructions:
  • Preheat your oven to 180°C. Grease 8 mini loaf pans. With an electric beater, whip the butter and sugar until light and fluffy.
  • Add the eggs one by one, beating well. Gently fold in the flours, cinnamon, and milk until fully incorporated.
  • Peel and grate the apple, then gently mix it in. Distribute the batter among the pans evenly and level the tops. Bake for 30 minutes or until a toothpick comes out clean. Let the pans sit for 5 minutes before transferring the cakes to a wire rack set over a tray to cool.
  • Combine icing sugar, vanilla extract, and 1 1/2 tablespoons of water in a small bowl until smooth. Drizzle over the cakes and sprinkle lightly with extra cinnamon.
