Little bread & butter puddings

Ingredients:
  • Melted reduced-fat dairy spread, to grease
  • 6 thick slices spicy fruit loaf, crusts removed
  • 15.00 gm reduced-fat dairy spread
  • 435ml (1 3/4 cups) reduced-fat milk
  • 60g (1/4 cup) caster sugar
  • 1 egg
  • 1 egg white
  • 4.40 gm vanilla essence
  • 26.40 gm lime marmalade
  • 12.00 gm pure icing sugar, sifted, to dust
Instructions:
  • Preheat oven to 160°C. Lightly grease twelve 50ml-capacity ovenproof dishes or ramekins with melted dairy spread and place on a baking tray.
  • Spread the bread slices delicately with dairy spread. Cut each slice into 16 small triangles and arrange 8 triangles in each dish with the corners pointing upwards.
  • Combine milk, sugar, egg, egg white, and vanilla in a jug until smooth. Gently pour the mixture over the bread triangles and let it sit for 15 minutes to absorb.
  • In a saucepan over low heat, gently melt the marmalade. Brush the melted marmalade onto each uncooked pudding surface. Bake in a preheated oven for 20 minutes or until the puddings are puffed and a knife inserted in the centers comes out clean.
  • Once out of the oven, sprinkle with icing sugar. Serve warm to enjoy the full height of the puddings.
