Kid-friendly veggie-packed burger patties.
Ingredients:
  • butter lettuce
  • 500g lean beef mince
  • 1 small carrot, grated
  • 1 small red onion, grated
  • 125.00 ml reduced-fat grated cheese
  • 1 zucchini, grated
  • 1 egg, lightly beaten
  • 2 Weetbix, crushed
  • 18.20 gm olive oil
  • 8 slices thick wholegrain bread
  • 4 cherry tomatoes, halved
Instructions:
  • In a bowl, mix together mince, carrot, onion, cheese, zucchini, egg, Weetbix, and sauce until well combined. Shape mixture into small balls and flatten with your palm.
  • Heat oil in a large non-stick frying pan over medium heat, then pan-fry rissoles in batches for 3-4 minutes per side until fully cooked.
  • Toast bread slices and cut into fun shapes using a biscuit cutter. Place one rissole on each of 4 toast slices, then add lettuce, tomato, and another toast slice on top. Serve and enjoy!
