Little chocolate cakes

Ingredients:
  • 3 eggs
  • 125g caster sugar
  • 90g rice flour
  • 30g cocoa powder
  • 60ml olive
  • 40g orange chocolate bar, grated
  • Icing sugar, to dust
  • 300ml thickened cream, to serve
Instructions:
  • - Preheat your oven to a cozy 180°C. - Lightly grease 6 x 3/4 cup ovenproof ramekins or a large muffin tin and nestle them in a baking dish. - Using electric beaters, whip eggs and sugar until they are thick and pale, then transfer the mixture to a large bowl.
  • Combine and sift the flour and cocoa together. Gently fold the mixture into the oil and grated chocolate using a large metal spoon. Spoon the batter into the prepared ramekins or tins.
  • Place the ramekins in a baking dish and pour boiling water around them until it reaches halfway up the sides. Bake for 30-40 minutes until the tops are slightly crusty. Remove from the oven and allow them to cool.
  • Carefully invert the cakes onto plates. Sprinkle with icing sugar and pair with whipped or pourable cream. Enjoy these delectable treats either warm or chilled.
