Create magical fairy floss meringues for a delightful treat.
Ingredients:
  • 215.00 gm caster sugar
  • 4 egg whites
  • Pink gel food colouring
  • Pink coloured sugar
Instructions:
  • Preheat your oven to 200°C/180°C fan-forced and prepare 2 large baking trays by greasing and lining them with baking paper.
  • Evenly dust sugar over a prepared tray. Bake for 5 to 6 minutes until the sugar's edges begin to melt. Take out from the oven and lower the temperature to 100°C/80°C fan-forced.
  • Using an electric mixer, whisk egg whites until soft peaks form. While the mixer is on, slowly add sugar in a steady stream. Beat for 5-6 minutes until sugar is dissolved. Mix in vanilla until well combined.
  • Create colorful stripes inside a piping bag fitted with a 1cm plain nozzle by running a skewer dipped in food coloring down the sides to form 6 stripes. Fill the piping bag with half of the meringue mixture. Pipe meringues (about 4cm in diameter), 2cm apart, onto the tray. Repeat the process by adding more food coloring stripes in the piping bag and filling it with the remaining mixture. Finish by sprinkling pink sugar on the meringues.
  • Bake for 45 minutes, or until just firm to the touch. Turn off the oven and let it cool completely with the door closed before serving.
