Fairy meringues

Magical party meringues that little chefs will adore creating.
Ingredients:
  • 4 egg whites
  • 2.20 gm vanilla essence
  • 220g caster sugar
  • Pink food colouring, just a few drops
  • 255g chocolate melts
  • Coloured sugar crystals or sprinkles, to decorate
Instructions:
  • Preheat your oven to 100°C and line two baking trays with non-stick baking paper. Use an electric beater to whip the egg whites until soft peaks form, then gently mix in the vanilla.
  • Gradually add the sugar, 2 tablespoons at a time, while beating thoroughly until the mixture is thick, glossy, and all the sugar is dissolved. To test, rub a small amount between your thumb and forefinger - it should be smooth, not grainy.
  • Gently swirl in a touch of pink food coloring into the mixture. Scoop heaping dessert spoonfuls onto the trays. Bake for 90 minutes, then let it cool completely in the oven with the oven turned off.
  • Follow the package instructions to melt the chocolate. Dip meringues in chocolate, then decorate with sugar crystals or sprinkles. Allow the meringues to set before serving.
