Little Mediterranean scrolls

Create delicious, bite-sized scrolls with just 4 ingredients. Perfect for packing in school lunchboxes.
Ingredients:
  • 135g jar tomato tapenade
  • 2 sheets frozen ready-rolled puff pastry
  • 50g baby spinach, shredded
  • 100g feta, crumbled
Instructions:
  • Preheat your oven to 200C/180C fan forced. Spread half of the tapenade over one pastry sheet, then add half of the spinach and half of the feta. Roll tightly to seal in the delicious filling, trim the ends, and slice into 1cm rounds. Place the rounds cut-side up on baking paper-lined trays. Repeat the process with the remaining tapenade, pastry, spinach, and feta.
  • Bake until golden and puffed, 15-20 minutes. Serve hot.
