Quick and cozy loaf pan lasagna with chunky sausage and rustic tomato sauce, perfect for two.
Ingredients:
  • 2 tablespoons olive oil
  • 2 Italian chicken sausages (about 1/2 pound)
  • 1 can (28 ounces) whole, peeled tomatoes
  • 1 clove garlic, thinly sliced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon sugar
  • 1 large egg
  • 1 cup ricotta cheese
  • 1/3 cup finely grated Parmesan
  • Pinch ground nutmeg
  • Pinch ground black pepper
  • Oil or oil spray (for the loaf pan)
  • 4 no-boil lasagna noodles
  • 1/2 cup shredded mozzarella
  • For garnish:
  • Chopped parsley
Instructions:
  • - In a skillet, heat 1 tablespoon of oil over medium-high heat. - Slice the sausage into rounds or remove the casing by slicing lengthwise and cook like ground sausage. - Add the sausage to the pan when the oil shimmers and cook until browned, about 6 minutes. Break it up with a utensil as you cook. - Transfer the cooked sausage to a plate.
  • Chop the tomatoes: Open the can of tomatoes and use scissors to roughly chop them into chunky pieces before adding them to the skillet.
  • Prepare the sauce: Heat 1 tablespoon of oil in the same skillet you used for browning the sausage over medium heat. Sauté sliced garlic and oregano for 30 seconds until garlic is sizzling. Stir in tomatoes with juices, salt, and sugar. Simmer for 2 to 3 minutes until hot. Use a potato masher to gently break down the tomatoes, aiming for a chunky consistency. Return sausage to the pan and cook for 10 minutes. Adjust seasoning with more salt and sugar to taste.
  • Prepare the ricotta mixture by combining the egg, ricotta, Parmesan, nutmeg, and pepper in a small bowl.
  • Preheat the oven to 400°F and prepare a 4x8-inch loaf pan by brushing or spraying it with oil.
  • Layer the lasagna in the loaf pan starting with 1/2 cup of tomato-sausage sauce at the bottom. Add 1 noodle, then spread 1/2 cup sauce, followed by 1/3 cup of ricotta mixture. Continue layering with noodle, ricotta, and sauce, finishing with mozzarella on top. Enjoy your delicious creation!
  • Bake lasagna to perfection: Place the loaf pan on a baking sheet, cover with foil to prevent sticking, and bake for 25 minutes. Remove from the oven, adjust any uneven layers with a spoon, lower the oven temperature to 375°F, and bake for an additional 15 minutes until bubbly and golden brown. Optional: for stretchy cheese, check after 10 minutes.
  • Before indulging in the layers of deliciousness, let the lasagna rest for 10 minutes. For a pop of color and fresh flavor, sprinkle with chopped parsley to your liking.
