Lobster and summer fruit salad

Indulge in a festive lobster salad with fresh summer fruits.
Ingredients:
  • 3 baby cos lettuce, leaves separated, torn
  • 1 bunch rocket, trimmed
  • 1 large avocado
  • 1/2 medium red onion, thinly sliced
  • 125.00 ml small fresh mint leaves
  • 125.00 ml small fresh coriander leaves
  • 1 large mango, thinly sliced
  • 120g fresh raspberries
  • 2 cooked lobster tails, meat removed, sliced
  • 65.63 gm lemon juice
  • 36.40 gm olive oil
  • 11.80 gm Dijon mustard
  • Pinch caster sugar
Instructions:
  • Place a bed of lettuce and rocket on a platter. Halve the avocado, remove the stone, and slice the flesh. Arrange avocado slices over the salad with onion, mint, coriander, mango slices, and raspberries. Finish by topping with lobster meat.
  • Combine juice, oil, mustard, and sugar in a small bowl, whisking until well mixed. Drizzle the dressing over the salad and enjoy.
  • Serve this dish alongside a glass of Houghton Chardonnay.
