Lobster with lime and coriander butter

Wow your loved ones with this tasty Lobster dish infused with zesty lime and fragrant coriander butter.
Ingredients:
  • 4 x 500g cooked lobsters
  • 36.40 gm extra virgin olive oil
  • Coriander sprigs, to serve
  • Lime wedges, to serve
  • 150g Brand butter, cubed, at room temperature
  • 82.50 ml coriander leaves, chopped
  • 0.63 gm ground paprika
  • Juice & finely grated zest of 1 lime
Instructions:
  • For the lime & coriander butter, add all the ingredients into a food processor and blend until creamy.
  • Place a piece of baking paper on a board. Spread butter mixture in the middle. Use the paper to shape into a log, roll it up, and twist the ends to seal. Chill until ready, then unwrap and slice into 1cm pieces.
  • Place each lobster belly-up on a cutting board and carefully cut in half lengthwise using a large, sharp knife. Gently pat the insides of the lobsters dry with paper towels.
  • Preheat a barbecue grill or chargrill pan on high. Brush lobster halves with oil, season, and cook cut-side down until lightly browned. Flip the lobsters, top with butter slices, and cook shell-side down until heated through. Serve with coriander, lime wedges, and extra butter if desired.
