Lobster rolls with finger lime mayo recipe

Elevate your dish with native lime caviar, also known as finger limes. These tiny, flavor-packed pearls add a burst of taste and elegance to any seafood dish. Try our easy and delicious finger lime mayo for a perfect pairing with lobster or your favorite seafood.
Ingredients:
  • 1 large cooked lobster tail (about 225g)
  • 100g mayonnaise
  • 40.00 ml fresh finger lime pearls (see notes), plus extra 40.00 ml to serve
  • 21.00 gm lemon juice (or to taste)
  • 4 small brioche rolls, split lengthways
  • 40g butter, melted
  • 4 butter lettuce leaves
Instructions:
  • Dice the lobster meat into 1cm pieces and mix it with mayonnaise and finger lime pearls in a large bowl. Season with salt and pepper, then add lemon juice to adjust acidity to taste.
  • Brush the interior of bread rolls with decadent butter. Toast the bread in a frying pan, cut-sides down, over medium heat until beautifully golden, for about 1-2 minutes.
  • Stuff rolls with a delectable blend of lettuce and lobster, then garnish generously with lime pearls before serving promptly.
