Lobster & watercress salad with lime butter

Elevate Christmas with a gourmet lobster appetizer.
Ingredients:
  • 9 cooked lobster tails
  • 125ml (1/2 cup) fresh lime juice
  • 200g butter, cubed
  • 40.00 ml finely chopped fresh chives
  • Salt & freshly ground black pepper
  • 4 Lebanese cucumbers
  • 2 bunches watercress, sprigs picked, washed, dried
  • 3 ripe avocados, halved, stones removed, peeled, thinly sliced
Instructions:
  • Cut the underside of 1 lobster tail with sharp kitchen scissors, then gently remove the shell, keeping the meat intact. Cut the lobster meat into 4 medallions. Repeat with the remaining lobster tails.
  • In a small saucepan, gently heat the lime juice until nearly boiling. Slowly whisk in the butter, one cube at a time, until melted and smooth. Stir in the chives until fully incorporated. Season with salt and pepper to taste before serving.
  • Peel the cucumber into thin strips using a vegetable peeler. Arrange the cucumber, watercress, and avocado on serving plates. Place the lobster medallions on top and drizzle with lime butter. Serve promptly.
