Lobster with pickled ginger salad

Enhance the lobster's beauty with a simple, flavorful ginger salad.
Ingredients:
  • 2 bunches asparagus, trimmed
  • 4 green onions, trimmed, thinly sliced lengthways
  • 62.50 ml pickled ginger, drained
  • 20.00 ml rice wine vinegar
  • 21.00 gm light soy sauce
  • 5.00 gm caster sugar
  • 1/2 tsp finely grated fresh ginger
  • 1/2 tsp sesame oil
  • 2 cooked lobster tails, shell removed, deveined, thickly sliced
Instructions:
  • Peel asparagus into ribbons using a vegetable peeler. Soak green onions in ice water to curl for 5 minutes, then drain. Mix together asparagus, green onions, and pickled ginger in a bowl.
  • In a small bowl, vigorously mix vinegar, soy sauce, sugar, fresh ginger, and oil. Plate lobster and salad. Drizzle with dressing and serve promptly.
