BBQ lobster with corn and ginger butter recipe

Indulge in succulent BBQ lobster with flavorful corn and ginger butter - a decadent treat for your taste buds!
Ingredients:
  • 3 spring onions, white and green parts, divided
  • 300g unsalted butter, softened
  • 60.00 ml finely grated fresh ginger
  • 6 corn cobs, husks and silk removed
  • Olive oil, for coating
  • 6 lobster tails, halved lengthways
  • 400g green beans, trimmed
  • 12.00 gm sesame seeds, toasted
  • 2 limes
  • Crushed chilli flakes, to serve (optional)
Instructions:
  • Preheat a barbecue to high heat. Finely dice the white sections of the spring onions. Mix the white sections of the spring onions, butter, ginger, and 1½ tsp sea salt flakes in a medium bowl. Place half of the butter mixture into a small serving dish and set aside.
  • Brush the corn with oil and grill, turning occasionally, for 8 minutes until charred and tender. Brush with the remaining butter mixture, season with salt, cut each cob into four pieces, and arrange on a large serving platter. Cover to keep warm.
  • Brush the lobster tails with oil and barbecue them, cut-side down, until char marks appear, about 3 mins. Turn the lobster tails over, brush with the butter mixture, and continue cooking for another 3 mins or until cooked through. Transfer to a serving platter and cover.
  • Coat green beans generously with oil, ensuring they are well covered. Grill on the barbecue, flipping occasionally, for 5 minutes or until they develop a slight char and are tender-crisp. Season to taste and then plate them on a serving platter.
  • 1. Finely chop the green parts of the spring onions. 2. Sprinkle sesame seeds and chopped spring onions over the lobster mixture. 3. Finely grate lime rind and sprinkle over the platter. 4. Quarter limes, squeeze a bit of juice over the lobster mixture, and arrange lime wedges on the platter. 5. Sprinkle with chili flakes, if desired. 6. Serve with the reserved butter mixture.
