Lobster burger

Indulgent lobster BLT burger - a must try! Easy access to lobster in Britain. Recipe for both mini and regular burgers. Tail meat used, but claws can also be added.
Ingredients:
  • 1 cooked 700-800g lobsters, from sustainable sources
  • olive oil
  • 1 heaped teaspoon Dijon mustard
  • 4 thin rashers of higher-welfare smoked streaky bacon
  • 4 burger buns
  • tomato ketchup
  • mayonnaise, made using free-range eggs
  • 1 lemon
  • 1 handful of watercress
  • 1 soft round lettuce
  • 1 red onion
  • 2 ripe tomatoes (use 1 yellow if you like)
  • ½ a fresh red chilli
  • extra virgin olive oil
  • red wine vinegar
Instructions:
  • For the salsa, grate tomatoes using a fine-to-coarse grater until you get a slurry, then discard the seeds and skin. Add grated chili, season well, drizzle with oil, vinegar, and mix in chopped fresh herbs, if desired. Slice lobster tails into 2cm pieces, leaving the shell intact. Toss with oil, sea salt, black pepper, and mustard, then barbecue for 2-3 minutes per side. Barbecue bacon until crispy. Toast buns, rub with garlic, drizzle with oil, add ketchup, mayo, and lemon juice. Place lettuce, watercress, lobster, salsa, bacon, and red onion on the buns, then top and secure with skewers before serving.
