Chilled lobster and avocado tossed in a zesty ginger-soy dressing.
Ingredients:
  • 1 (2 pound) lobster
  • 3 tablespoons white wine vinegar
  • 3 tablespoons canola oil
  • 0.5 teaspoon soy sauce
  • 0.25 teaspoon grated fresh ginger
  • 1 pinch white sugar
  • salt and freshly ground black pepper to taste
  • 1 avocado, cut into chunks
Instructions:
  • Fill a tall pot with 2 inches of water and bring it to a boil. Steam the lobster covered until tender, about 20 minutes. Rinse, cool, and cut the lobster meat into chunks, then chill for at least 15 minutes.
  • Combine vinegar, oil, soy sauce, ginger, sugar, salt, and pepper for a flavorful dressing.
  • Combine the chilled lobster with the dressing, gently fold in the avocado, and serve chilled.
