Long noodle soup with barbecue pork

Indulge in this delicious BBQ pork noodle soup.
Ingredients:
  • 1.5L chicken style liquid stock
  • 60ml shao hsing wine
  • 42.00 gm soy sauce
  • 2 star anise
  • 1 cinnamon stick
  • 450g long flat (approximately 2cm wide) rice noodles
  • 250g Chinese barbecue pork, sliced
  • 1 baby buk choy, trimmed and roughly chopped (see notes)
  • 4 green onions, sliced diagonally
Instructions:
  • In a large saucepan over medium heat, combine the stock, Chinese cooking wine, soy sauce, star anise, and cinnamon. Bring to a simmer, then reduce heat to medium and simmer for 5 minutes. Remove and discard the spices.
  • Place the rice noodles in a bowl and cover with boiling water. Let them sit for 3 minutes, then drain.
  • Combine the cooked noodles, pork, bok choy, and green onion in the soup and let it simmer for 3-4 minutes. Serve the delicious noodle soup in deep bowls. Enjoy!
