Baked apple halves topped with caramelized cream cheese and crunchy granola for a delicious apple crisp dessert. Enjoy with a scoop of vanilla ice cream!
Ingredients:
  • cooking spray
  • 0.25 cup cream cheese, softened
  • 2 tablespoons brown sugar
  • 2 tablespoons maple syrup
  • 2 tablespoons chopped walnuts
  • 1.5 teaspoons ground cinnamon
  • 0.25 teaspoon vanilla extract
  • 0.125 teaspoon ground nutmeg
  • 0.125 teaspoon ground allspice
  • 1 apple, halved and core cut out
  • 1 tablespoon butter
  • 0.25 cup granola
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C), then give your 8x8-inch baking dish a light spray with cooking spray.
  • Combine cream cheese, brown sugar, maple syrup, walnuts, cinnamon, vanilla extract, nutmeg, and allspice in a bowl and mix until fully incorporated.
  • Arrange the apples cut-side up in the baking dish, using core pieces for support if necessary. Fill each cored apple with 1 1/2 teaspoons of butter and then evenly divide and spread half of the cream cheese mixture over the top of each apple, filling the cavity and covering the entire surface.
  • Bake in the preheated oven for 35 minutes until apples are slightly softened. Sprinkle granola over apples and press it gently into the filling. Bake for another 10 minutes until apples are cooked through and granola is nicely browned.
