  • 0.25 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 0.25 teaspoon salt
  • 0.5 cup unsalted butter, softened
  • 1 teaspoon instant coffee granules
  • 0.25 cup miniature semisweet chocolate chips
  • 0.25 cup white chocolate chips
  • 1 cup dried cherries
Instructions:
  • Preheat the oven to 350°F (175°C).
  • Prepare two large baking sheets by lining them with parchment paper.
  • In a bowl, mix together flour, cocoa powder, baking powder, and salt.
  • In a spacious bowl, use an electric mixer on medium-high speed to whip the butter and sugar together until they are light and fluffy.
  • Mix the egg, coffee granules, and vanilla into the butter and sugar mixture until well combined.
  • Lower the speed and slowly add the flour mixture while beating until just combined.
  • Fold in a luxurious mix of semisweet chocolate chips, white chocolate chips, and succulent dried cherries.
  • Spoon the dough onto the baking sheets, spacing them two inches apart.
  • Bake each batch in the preheated oven for 10 to 12 minutes, or until cookies are just starting to firm up.
  • Allow to cool on baking sheets for two minutes.
  • Place the cookies on a wire rack to cool thoroughly.
