Create a flavorful and nutritious meal with lots of veggies for the family.
Ingredients:
  • 40.00 ml plain flour
  • 3.75 gm sweet paprika
  • 550g beef silverside eye steaks, thinly sliced
  • Olive oil spray
  • 1 brown onion, halved, thinly sliced
  • 250g button mushrooms, halved
  • 1 small red capsicum, halved seeded, thinly sliced
  • 1 zucchini, halved lengthways, thinly sliced diagonally
  • 1 garlic clove, crushed
  • 250ml (1 cup) chicken style liquid stock (see notes)
  • 400g can peeled tomatoes
  • Steamed white rice, to serve
  • Greek-style natural yoghurt, to serve
Instructions:
  • In a bag, mix together flour and paprika. Season generously with salt and pepper. Add beef to the bag and shake vigorously until the beef is fully coated with the seasoned flour mixture.
  • In a large non-stick frying pan over medium-high heat, brown half of the beef for 1 minute on each side. Transfer to a plate and repeat with the remaining beef, reheating the pan between batches.
  • Spritz the pan with oil. Sauté the onion over medium heat for 3-4 minutes until soft. Toss in the mushroom, capsicum, and zucchini. Sauté for 2 minutes until vegetables are golden. Stir in the garlic and cook for 1 minute until fragrant.
  • Combine the stock and tomato with the vegetables, stirring well. Add the beef and cook, stirring, for 5 minutes until the vegetables are tender and the mixture slightly thickens. Serve the goulash over rice in bowls, topped with a dollop of yogurt.
