Family-favorite Louisiana crawfish bisque: Hearty, creamy soup with crawfish tails, corn, and Creole flair.
Ingredients:
  • 0.5 cup butter
  • 0.5 cup chopped onion
  • 0.5 cup chopped green onion
  • 1 pound crawfish tails
  • 2 (10.5 ounce) cans cream of potato soup
  • 1 (10.5 ounce) can cream of mushroom soup
  • 1 (15 ounce) can yellow corn, drained
  • 1 (14 ounce) can white corn, drained
  • 1 (8 ounce) package cream cheese
  • 1 pint half-and-half
  • 2 tablespoons Creole seasoning (such as Tony Chachere's®), or more to taste
Instructions:
  • In a large pot over medium heat, melt butter. Sauté onion and green onion in the melted butter until softened, about 5 minutes, stirring occasionally.
  • Combine crawfish tails, condensed soups, canned corn, and cream cheese in a pot. Stir frequently until the cream cheese is melted and all ingredients are fully combined, approximately 5 minutes.
  • Combine half-and-half and Creole seasoning into the mixture, then season with salt and black pepper. Simmer until heated through, approximately 15 minutes.
