Impress with crowd-pleasing honeyed Greek Loukoumades, ideal for entertaining!
Ingredients:
  • 750.00 gm warm water
  • 40.00 ml ouzo liqueur
  • 332.50 ml instant potato mash powder
  • pinch salt
  • 20.00 gm caster sugar
  • 499.50 gm self-raising flour
  • 1380.00 gm vegetable oil, for deep-frying
  • 268.13 gm honey
  • 143.75 gm walnuts, finely chopped
  • 5.00 gm ground cinnamon
Instructions:
  • In a bowl, mix warm water and ouzo. Add mash powder, salt, sugar, and flour. Combine well. Cover and let the dough rest for 10 minutes. (Dough will be soft and sticky).
  • Warm the oil in a deep saucepan, wok, or deep fryer over medium heat until it shimmers.
  • Drop dough balls into hot oil with a wet teaspoon, cooking 8 to 10 at a time. Cook for 3 minutes or until golden and puffed, stirring occasionally. If oil is too hot, they will brown quickly and not cook through. Remove from oil with a slotted spoon and drain on a wire rack.
  • Pour honey into a microwave-safe jug and heat it on HIGH for 45-50 seconds until warm and runny. Transfer the warm loukomadies to a large bowl, drizzle with the warm honey, sprinkle with walnuts and cinnamon, toss well to coat, and serve.
